This cookie is super yummy. I love the bitterness of the kumquats, and Chinese 5-spice has basically every spice I ever want and need. Paired with the sugary sweet crunch of the walnuts, it ended up being an ideal cookie for me. Take out whatever you don’t want. This cookie is great plain, with cinnamon sugar, or with chocolate chips. It’s your butter, your cookie, your kitchen-- do whatever you want.
1 ¾ cup flour
½ tsp baking powder
½ tsp salt
½ cup brown sugar
½ cup Chinese 5-spice Kumquats (see link below)
½ cup candied walnuts (see link below)
2 sticks (½ lb) butter - softened or room temp
Preheat your oven to 300. Mix together the dry ingredients. Incorporate the kumquats and walnuts, if using. Then add in the butter and mix until it is a doughy ball.
Roll into balls and place on your parchment lined tray. Bake for about 45 minutes, even up to 60 minutes, until they are golden brown on the bottom and lightly golden up top.
