Eat all the tomatoes as fast as you can.
3-4 large tomatoes
¼ cup pickled red onions (homemade or store bought)
2 TB pickled jalapenos (homemade or store bought)
¼ cup chives
1 log goat cheese
1 tsp each salt + pepper
2 TB honey
Chop the tomatoes any which way you prefer. Top with the pickled red onions and pickled jalapenos. Mix together the chives, goat cheese, salt, pepper + honey. Drop onto the tomato salad. Season with more salt and pepper if you’d like, drizzle with olive oil if you’d like. Eat with bread, if you’d like.
