Nanny's Banana Bread

My dad’s mom, who we called Nanny, is to thank for this banana bread recipe. Every time my family visited her in Tennessee, she would pour so much love and time into cooking and baking for us to enjoy. I always looked forward to this bread the most, which she served every morning for breakfast and always had a loaf on the counter.

For a snack, topping with butter and a sprinkle of salt is my go to, but my brother and I loved making breakfast sandwiches with our sausage and eggs in the morning. The smell of the bread baking brings me right back to her small kitchen in Knoxville.

My Nanny’s love for baking lives on through her recipes and I’m so glad to share one that means so much to me!

Banana Bread-

1 3/4 cup all purpose flour

1 1/2 cup sugar

1 tsp baking soda

1/2 tsp salt

2 eggs

2 ripe medium mashed bananas (1 cup)

1/2 cup vegetable oil

1/4 cup + 1 tbsp buttermilk

1 tsp vanilla extract

Stir and sift dry ingredients

Combine wet ingredients and add to dry ingredients

Pour into 9x5x3 pan

Bake at 325 degrees for 1 hour and 20 minutes
