Peanut Butter Staff Meal Cookie

This kept me sustained through many a morning. And y’all know if it’s not a slice of cake I’m eating for breakfast, it better be a cookie. 





1 cup peanut butter

¾ cup coconut sugar (you can use brown sugar if you want, I just think the brown sugar makes it a little too sweet and I like the texture coconut sugar gives to it - it makes it slightly chewy)

1 egg

2 tsp baking soda

1 tsp salt

1 cup chocolate chips

½ cup sunflower seeds

Optional: 1 cup butterscotch chips (that’s how my Grandma did it) 


Mix all ingredients together, and scoop into little balls - about 2 TB. Bake at 350 for 10 minutes.


Let them cool + rest - they’ll break apart if you try to eat them right away.

Can you substitute another nut butter for this recipe? Also am I seeing correctly no flour needed? Thanks!
