This is a recipe my grandmother often made for my family around the holidays. It's such a quick but delightful treat that I love to make year round. It's fun to experiment with different add-ins and toppings such as chocolates, fruits, or a combination!
Ingredients (v, nuts):
2 1/2 cups flour
3/4 cup finely chopped walnuts (or your nut of choice! I used macademia nuts) (can be omitted)
1/2 tsp salt
1 cup vegan butter, softened
1 tsp vanilla extract
1/2 cup powdered sugar
The Steps:
Combine flour, nuts, and salt.
In a separate bowl, beat together butter, sugar, and vanilla. Slowly add in the dry mixture, 1/3 at a time, until well combined.
Roll into small balls, about 1", and place on a lined baking sheet. Then bake at 400F for 8 minutes.
Let cool slightly before rolling each ball in powdered sugar.
